Nutty Butter Cake Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter (softened)
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup mixed nuts (walnuts, almonds, pecans, or hazelnuts) – roughly chopped
  • 1/4 cup ground nuts (optional for a more nutty flavor)

For the Nutty Topping:

  • 1/4 cup honey
  • 1/4 cup butter
  • 1/2 cup mixed nuts (whole or halved)
  • 1/4 tsp cinnamon (optional)

Instructions:

  • Preheat the oven to 350°F (175°C). Grease a 9-inch round or square cake pan and line the bottom with parchment paper.

 

  • Prepare the cake batter:

In a bowl, cream the softened butter and sugar together until light and fluffy.

Add the eggs one at a time, beating well after each addition.

 Mix in the vanilla extract.

 

  • Combine dry ingredients:

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

  • Alternate adding dry ingredients and milk:

Gradually add the flour mixture to the butter-sugar mixture, alternating with the milk. Start and end with the dry ingredients.

 Fold in the chopped nuts and, if using, ground nuts.

  • Bake the cake:

Pour the batter into the prepared pan and smooth the top.

Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  • Prepare the nutty topping:

In a small saucepan, melt the butter and honey over low heat.

 Stir in the nuts and cinnamon (if using), and cook for 1–2 minutes until the nuts are slightly toasted and coated with the honey mixture.

  • Assemble:

Once the cake has cooled, spoon the nut topping over the cake, allowing it to drizzle down the sides.

  • Serve:

Slice the cake and enjoy it as is, or with a dollop of whipped cream or a scoop of ice cream for extra indulgence.

This cake pairs beautifully with coffee or tea and highlights the rich flavor of nuts.
